The pearl mussel leaves a precious pearl growing from a sand grain, well protected in its interior. What is unintentionally refined in the pearl mussel is a carefully cultivated process at making aceto balsamico antico.

A must of white grapes (usually from Trebbiano or Lambrusco vines) is thickened by cooking and then married with stored aceto. In addition, a portion of fresh wine may be added before a non-alcoholic fermentation starting. Afterwards, the aceto is being stored in wooden casks for years, where it is cherished and cultivated. During storage, the aceto loses water and is concentrated until a syrupy vinegar is obtained. By storing in various wooden barrels of the woods oak, chestnut, cherry, ash and mulberry, the aceto gets its typical color and a wide flavor spectrum.

REHMANN combines the refined aromas of the aceto antico with the variety of flavors that a grand cru cocoa Maracaibo 65% from Venezuela offers. The art of marrying these two raw materials is to embed the acid of the aceto balsamico carefully into the cocoa. Convince yourself. We love this combination.
