Topography - Our cocoa is branded "Tolai". This means that the cocoa comes from small farmers on the entire Gazelle Peninsula on East New Britain. Thus the topography varies in the cultivation area. The "Tolai" cocoa is fermented centrally in the Talina Fermentery.
Description - The cocoa found its way originally probably around 1900 over Samoa to today's Papua New Guinea. Genetically, the cocoa had its roots in Venezuela and Trinidad. It is assumed that after several stations in Cameroon, Ceylon and Java cocoa came over Samoa to Papua New Guinea. In a second wave, cocoa from Java came to PNG in 1932, with this material being said to have been plants from the upper Amazon.
Character - intensive notes of spices, earthy and smoky, hints of peat, some fruit acids.
